Preheat oven to 375°F.
Slice the sweet potato in half lengthwise. Drizzle both sides with olive or avocado oil and season generously with sea salt and black pepper.
Place the sweet potato halves cut-side down (skin-side up) on a baking sheet. Bake for 45 minutes, or until the sweet potato is fork tender with crispy edges.
While the sweet potato cooks, heat a skillet over medium heat. Add a little grass-fed butter to coat the pan, then add the ground beef. Cook until browned and fully cooked through, breaking it apart as it cooks.
Add the Siete Taco Seasoning and water. Stir until the beef is evenly coated and continue cooking for another minute, or until the water has mostly absorbed.
Once the sweet potato is finished, top with butter, and add cottage cheese to a plate alongside the crispy sweet potato.
Top the cottage cheese with the seasoned ground beef. Add sliced avocado on the side.
Finish with a drizzle of Tupelo honey, a sprinkle of flaky sea salt, and fresh cilantro.
Serve immediately and enjoy!
