Crispy Sweet Potato Beef Bowl with Cottage Cheese (Viral TikTok Recipe)

If you spent any amount of time on TikTok in 2025, chances are you probably saw some version of the sweet potato beef bowl floating around.
I kept seeing people make these bowls with diced sweet potatoes, cottage cheese, and seasoned ground beef, and honestly…I was intrigued. I love meals that are simple, high in protein, and actually keep me full, so I knew I had to try it. But of course, I had to switch things up a bit.
Instead of dicing the sweet potato, I roast it in halves until the edges get perfectly crispy and the inside stays soft and naturally sweet. Then I pair it with creamy cottage cheese, seasoned ground beef, avocado, and a little drizzle of honey.
And let me just say… the honey drizzle might sound random, but trust me. It brings everything together.
This has quickly become one of my favorite easy lunches to make when I want something filling, nutritious, and actually exciting to eat.

I love when a recipe trend comes around that’s simple enough to actually make in real life.
And as much as I love trying new recipes, most days I need something that doesn’t require a million ingredients or a ton of prep. Especially during the week, when I’m balancing mom life, work, and everything else that comes with a busy schedule.
This sweet potato beef bowl checks all the boxes for me:
- It’s packed with protein
- It’s made with simple ingredients
- It keeps me full for hours
- It has the perfect mix of sweet and savory flavors
The crispy sweet potato is definitely my favorite part. The caramelized edges mixed with the creamy cottage cheese and seasoned beef makes this feel way more satisfying than your typical “healthy lunch.”

How to Make This Crispy Sweet Potato Beef Bowl

Jump to Recipe- Roast the Sweet Potato: Start by slicing your sweet potato in half lengthwise. Drizzle both sides with olive oil or avocado oil, then season with sea salt and pepper. Place the sweet potato halves skin-side up on a baking sheet with parchment paper and roast until the edges are crispy and the inside is soft. This is the step that takes the longest, but it’s also what makes this recipe so good.
- (Trust me, don’t rush the sweet potato. The crispy edges are worth it!)
- Cook the Ground Beef: While the sweet potato is roasting, cook your ground beef (or preferred meat) in a skillet. I like adding a little grass-fed butter first because it gives the beef a little extra flavor. Once the beef is cooked through, add your taco seasoning and a splash of water. Let everything cook together for another minute until the seasoning coats the beef.
- Build Your Bowl: Once everything is ready, it’s time to assemble! Add the cottage cheese to a plate, then top with the seasoned ground beef. Place the crispy sweet potato alongside the beef and cottage cheese. Add sliced avocado.
- Finish with a drizzle of Tupelo honey, a sprinkle of flaky sea salt, and fresh cilantro.
That's it! Simple, but so good.
Why I Love This High-Protein Lunch
This recipe has quickly become one of my favorite lunches because it’s the perfect combination of easy and satisfying.
- It actually keeps me full – The combination of protein from the beef and cottage cheese, plus healthy fats from the avocado, makes this a lunch that holds me over.
- It doesn’t feel like “diet food” – This is a big one for me. I want food that makes me feel good, but I also want it to taste good. This feels like comfort food while still being packed with nutrients.
- It’s easy to customize – Add more avocado, use different seasonings, swap the cottage cheese for something else… there are plenty of ways to make it your own.
- It’s a great way to use simple ingredients – Nothing fancy here. Just a handful of ingredients that come together really well.
Easy Substitutions & Swaps
One thing I love about this recipe is how flexible it is.
- Don’t like cottage cheese? You can swap it for plain Greek yogurt, although I personally love the texture that cottage cheese adds here.
- Want a little more spice? Use hot honey instead of regular honey, or add your favorite spicy seasoning.
- Don't eat ground beef? Ground turkey or chicken would work too, but I personally love the flavor of organic beef in this recipe. If you're vegetarian, you could also opt for tofu.
- Need more carbs? Add a second sweet potato or increase the serving size of the beef.

- Kirkland Organic Ground Beef – I love using organic beef because it has such great flavor, and it pairs really well with the sweet potato.
- or Butterball All Natural Fresh Ground Turkey, if swapping meat!
- Tupelo Honey – This is my favorite honey to drizzle on top, or honey from my local farmers market. The little bit of sweetness is what makes this recipe feel extra special.
- Good Culture Cottage Cheese – I typically use the low-fat version, but the whole milk option would be delicious if you want a little extra richness and healthy fat.
Final Thoughts
I totally get why this recipe went viral because it’s such a good combination of flavors. But I think the little changes are what make it even better.
The crispy roasted sweet potato, the creamy cottage cheese, the savory beef, the avocado, and that tiny drizzle of honey… it's just so good.

Crispy Sweet Potato Beef Bowl with Cottage Cheese (Viral TikTok Recipe)
Equipment

Ingredients
- 1 Small-Medium Sweet potato, (100-200g)
- 1/4 lb Organic ground beef, (4oz)
- 1/2 cup Cottage cheese, Good Culture
- 2 tsp Siete Taco Seasoning, Mild
- 1 tbsp Water
- 1/2 Avocado, sliced
- 1 tsp Honey, tupelo
- 2 tsp Olive or avocado oil
- 1 tsp Butter, grass-fed
- Sea salt, to taste
- Black pepper, to taste
- Fresh cilantro, for garnish
- Flakey sea salt, for garnish
Instructions
- Preheat oven to 375°F.
- Slice the sweet potato in half lengthwise. Drizzle both sides with olive or avocado oil and season generously with sea salt and black pepper.
- Place the sweet potato halves cut-side down (skin-side up) on a baking sheet. Bake for 45 minutes, or until the sweet potato is fork tender with crispy edges.
- While the sweet potato cooks, heat a skillet over medium heat. Add a little grass-fed butter to coat the pan, then add the ground beef. Cook until browned and fully cooked through, breaking it apart as it cooks.
- Add the Siete Taco Seasoning and water. Stir until the beef is evenly coated and continue cooking for another minute, or until the water has mostly absorbed.
- Once the sweet potato is finished, top with butter, and add cottage cheese to a plate alongside the crispy sweet potato.
- Top the cottage cheese with the seasoned ground beef. Add sliced avocado on the side.
- Finish with a drizzle of Tupelo honey, a sprinkle of flaky sea salt, and fresh cilantro.
- Serve immediately and enjoy!

A Few Things:
The crispy sweet potato is the best part!Most versions of this viral recipe use diced sweet potatoes, but I prefer roasting the sweet potato halves. The outside gets perfectly crispy while the inside stays soft and naturally sweet. Don't skip the honey drizzle.
It may sound unexpected, but the little bit of sweetness balances the savory beef, creamy cottage cheese, and avocado perfectly. If you like spice, hot honey would also be delicious! Adjust the toppings to your preference.
The measurements above are how I personally make this lunch, but feel free to adjust the cottage cheese, avocado, and seasoning based on what you love.

Making this for more than one person?Simply multiply the ingredients based on how many people you're feeding. For a family of four, here’s what I recommend:
- 4 small sweet potatoes
- 1 lb organic ground beef
- 1½ to 2 cups cottage cheese

- ¼ cup water
- 4 tsp honey drizzle (or more/less depending on preference)
